Ham and Vegetable Muffins
Ingredients
2 large zucchini grated
100 g Ham chopped
1 cup grated cheese
2 cups Flour Self-Raising
1 cup milk
3 Egg
1 handful baby spinach thinly sliced
1 Carrot peeled & grated
60 g Butter
salt and pepper
Procedure
- Preheat the oven to 160 degrees C.
- In a large mixing bowl, combine the flour, zucchini, carrot, spinach, cheese, and ham then mix it. Next, you can add salt and pepper to add flavor.
- Melt the butter and let it cool.
- Put the butter, milk, and egg along with the dry ingredients. Mix it well until well blended.
- Spoon the mixture into the prepared muffin holes until almost full.
Sprinkle with the remaining cheese - Bake at 160 degrees Celsius for 25 minutes or until a skewer comes out clean.
