Ham and Vegetable Muffins

Ingredients

2 large zucchini grated
100 g Ham chopped
1 cup grated cheese
2 cups Flour Self-Raising
1 cup milk
3 Egg
1 handful baby spinach thinly sliced
1 Carrot peeled & grated
60 g Butter
salt and pepper

Procedure

  1. Preheat the oven to 160 degrees C.
  2. In a large mixing bowl, combine the flour, zucchini, carrot, spinach, cheese, and ham then mix it. Next, you can add salt and pepper to add flavor.
  3. Melt the butter and let it cool.
  4. Put the butter, milk, and egg along with the dry ingredients. Mix it well until well blended.
  5. Spoon the mixture into the prepared muffin holes until almost full.
    Sprinkle with the remaining cheese
  6. Bake at 160 degrees Celsius for 25 minutes or until a skewer comes out clean.
  7. Serve and Enjoy!
