Blueberry Pop Tarts with Lemon glaze
Ingredients
For the Pastry
1 ½ Cups of All purpose flour
½ tsp Salt
2 tbsp Granulated sugar
1 egg
6 tbsp butter
2 tbsp ice water
Filling
1 cup of fresh blueberries
2 TBSP pure maple syrup
Glaze
1 cup (115 gm) powdered sugar
2 tbsp Lemon Juice
1 tsp lemon zest for Garnish
Procedure
- To prepare the Dough, combine the All purpose Flour, Salt and Sugar in a large mixing bowl. Put the butter and the egg and mix it. When it is well mixed, add 2 tbsp of ice water and mix again. If you don’t have a food processor you can do this by hand. After that place it in the fridge while making the filling and glaze.
- For the filling, place 1 cup of blueberries and the maple syrup in the pot and place on low/medium heat on the stove. Mix it frequently using a fork or spatula and mash the blueberries until it turns to a mushy consistency. Let cool.
- For the glaze, combine all ingredients for the glaze in a bowl until smooth. Set aside.
- Prepare a clean surface and a rolling pin where to place the dough. Take the dough out of the fridge and roll it out quickly.
- Place the filling inside the dough. Bake it for 20 minutes. Then let the pop tarts cool.
- Lastly, Spread the glaze on top of the pop tarts and serve
