Blueberry Pop Tarts with Lemon glaze

Ingredients

For the Pastry
1 ½ Cups of All purpose flour
½ tsp Salt
2 tbsp Granulated sugar
1 egg
6 tbsp butter
2 tbsp ice water

Filling
1 cup of fresh blueberries
2 TBSP pure maple syrup

Glaze
1 cup (115 gm) powdered sugar
2 tbsp Lemon Juice
1 tsp lemon zest for Garnish

Procedure

  1. To prepare the Dough, combine the All purpose Flour, Salt and Sugar in a large mixing bowl. Put the butter and the egg and mix it. When it is well mixed, add 2 tbsp of ice water and mix again. If you don’t have a food processor you can do this by hand. After that place it in the fridge while making the filling and glaze.
  2. For the filling, place 1 cup of blueberries and the maple syrup in the pot and place on low/medium heat on the stove. Mix it frequently using a fork or spatula and mash the blueberries until it turns to a mushy consistency. Let cool.
  3. For the glaze, combine all ingredients for the glaze in a bowl until smooth. Set aside.
  4. Prepare a clean surface and a rolling pin where to place the dough. Take the dough out of the fridge and roll it out quickly.
  5. Place the filling inside the dough. Bake it for 20 minutes. Then let the pop tarts cool.
  6. Lastly, Spread the glaze on top of the pop tarts and serve
