Raisin Pecan Oatmeal Cookies

Ingredients

1½ cups pecans
1½ cups raisins
1 cup unsalted butter, at room temperature
1 cup brown sugar
1 cup granulated sugar
2 large eggs
1 tsp baking powder
2 tsp pure vanilla extract
1 ½ cups all-purpose flour
1 tsp ground cinnamon
1 tsp salt
3 cups oatmeal

Procedure

  1. Preheat the oven to under 350 °F and prepare the cookie sheets or parchment paper.
  2. In a large mixing bowl, place the butter and beat it until it becomes creamy. Add the brown sugar and the granulated sugar and mix it again for 3 minutes until it is fluffy. You can also use an electric mixer if you like. Beat the egg and then put the vanilla extract. Mix it again.
  3. Mix flour, salt, baking soda, cinnamon, and nutmeg together in medium bowl. Stir the dry ingredients into the butter-sugar mixture. Add the raisins, oats and pecans. Stir it together.
  4. Spoon out the dough by large tablespoonfuls onto the prepared cookie sheets, leaving at least 2 inches between each cookie.
  5. Bake until the edges of the cookies turn golden brown, about 10 to 12 minutes. Note that the cookies will seem underdone and lightly colored everywhere but the edges. That’s okay, they will firm up as they cool.
  6. Cool 1 minute on cookie sheets. Then carefully remove them, using a metal spatula, to a wire rack. Cool completely. They will be quite soft until completely cooled. Store tightly covered.
